Bacon & Brown Sugar Pork
Updated: Dec 4, 2020
Double down on pork flavor, brought out by a sweet, spicy blend. Just leave it in the crockpot and enjoy a great, comforting, easy family meal.
2-3 lbs pork tenderloin
1 tsp salt
1/2 tsp pepper, garlic powder, onion powder, nutmeg, cinnamon, smoked paprika
2 tsp chili powder
1 tsp cayenne
½ cup brown sugar (I use dark)
Bacon (enough to cover the roast)
Mix the spices and thoroughly coat pork
Place in crockpot
Cover with bacon slices and tuck ends underneath
Place on high 3-4 hours for low about 5 hours
5-minute Bourbon Sauce

¼ C brown sugar
½ tsp chili powder
¼ tsp cinnamon
¼ tsp nutmeg
¼ tsp smoked paprika
¼ C bourbon
¼ C heavy cream
3 T butter
Mix the sugar and spices together.
In a small saucepan melt the butter and add the sugar and spice mix till thoroughly blended.
Add in the bourbon and stir until you don’t feel it gritty anymore. About a minute.
Once it bubbles add in the heavy cream.
Stir and serve.
Combine and serve the sweet, spicy sauce on the side or pour over.
It is thick and sweet so use sparingly.
Enjoy!
You can also use the spice from the pork as you can easily keep out 1/4 cup. It is pretty spicy though. To make the bourbon sauce spicy add a touch of cayenne but I doubt you'll need it
