Best Chicken Tenders

Simple, easy, flavorful. These are the best chicken tenders ever. My son says so :)
2-3 lbs chicken tenderloins or cut up chicken breast
1 Cup Flour
1 T salt
1 T pepper
1 T garlic powder
½ T onion powder
½ T chili powder
½ T cayenne (or less to taste)
¼ Franks Red Hot
Combine all dry ingredients in one bowl- I use a loaf pan.
Whisk together the eggs and Red Hot in another bowl.
Dip chicken pieces into the wet mixture one piece at a time. Shake off excess.
Place in flour mixture and coat evenly.
Place floured pieces on wax paper, parchment, baking pan until ready to fry.
Fry 2 to 3 pieces at 365℉ for 3-5 minutes until a golden brown.
Drain on paper towels.
My picky eaters have pushed me to some of the best recipes I have made. Unfortunately for me, I never used to measure unless I was using someone else’s recipe and even then it was more of a guide, especially with spices. This recipe was one that my son, Justin, was picky about. This wasn’t printed until he said this was the one.
Who doesn’t love chicken tenders? I raised three boys plus a husband on meat and potatoes as my parents were depression era babies (‘32, ‘29). Honestly, when the boys were little, in order to sneak in as many veggies as I could, it was stir-fries and rice but who’s keeping track?
Chicken tenders are a staple in any American household. I love staples and simplicity sometimes. I also love me some spice! Lol. This is a great starter or main dish for any crowd. If you have some teenie ones who don’t like spice cut down or out on the cayenne. Try it and adjust. You’ll love it.
