Dijon-Ranch Baked Chicken Breast

4 chicken breasts (2 cut horizontally)

1 c mayonnaise

1 T ranch seasoning

1 T dijon

½ c ground pork rinds

½ c parmesan


Season the chicken breasts with Shell spice blend or salt, pepper, garlic powder and onion powder. Feel free to get funky here and add more seasoning.

Mix mayo, ranch and dijon.

Dredge chicken breasts on both sides in the wet mix then place in a baking pan.

Mix together the pork rinds and parmesan and sprinkle generously over the tops of the chicken breasts.

Place in a 400℉ for approximately 30 minutes depending on the thickness of your chicken breasts.


I've made this recipe for quite some time and just finally got bored. I threw in italian seasoning in the beginning and a little here and there. It was good. Italian and even just basil or such are a great complement.


I usually love this in the fall and winter. It is primarily low carb using pork rinds instead of bread crumbs and butter, plus the pork rinds add a smokiness that mixes with the melted cheese in just the right way. I'm usually one for the big spice flavor but this is a milder, mellow, everyone will love it meal.
