Stuffed Bell Peppers w/2 sauces (1 Keto)

This is a crowd-pleasing, easy meal filled with veggies but keeping carbs down.


Stuffed Bell Peppers


4 bell peppers, color of your choice

2 lbs ground beef chuck

½ cup parmesan

1 cup diced can tomatoes

1 tsp salt

1 tsp pepper

1 tsp garlic powder


Clean and cut bell peppers. Allow them to dry while you get the filling together.

Mix the rest of the ingredients together and stuff each half with the filling.

Bake at 325° uncovered for 45 minutes in a 9x13 casserole.


Easy Sauce for Stuffed Bell Peppers


1 can stewed tomatoes

¼ cup moscato wine

1 tsp basil

½ cup diced onion

1 tsp sugar ( or more to taste)


  1. Sweat or cook the onions till they are slightly translucent or see through

  2. Blend the can of tomatoes

  3. Pour stewed tomatoes over the onions

  4. Add wine, basil and sugar

  5. Boil for 3-5 minutes

  6. Serve over these delicious stuffed bell peppers


Keto Quick Stewed tomato sauce for bell peppers


1 can stewed tomatoes (blended/pureed)

½ cup diced onion

1 tsp basil

1 tsp stevia



  1. Sweat or cook the onions till they are slightly translucent or see through

  2. Blend the can of tomatoes

  3. Pour stewed tomatoes over the onions

  4. Add basil and sugar

  5. Boil for 3-5 minutes

  6. Serve over your delicious stuffed bell peppers



Sauces:

You can add the ingredients in stewed tomatoes from scratch and of course, it’s delicious. Using a can and adding your own homey touches makes this a quick fix yet it tastes so elegant and good. I enjoy the only real crunch or bite in my smoother sauce to be onion but you can leave it chunky if you prefer.

This takes me back to the days my boys were still little and picky and I was searching for every way to add vegetables. I remember serving this on cold days and they loved it. I guess I loved it too because I’m feeling nostalgic eating these. I can’t believe I haven’t made these in so long.


The sauce I used to use was a recipe my mother had. I lost it over the years as it was a simple handwritten card of a recipe she found. She had hundreds of articles, clippings, and handwritten recipes when she died. I still have all the ones she never did anything with. I may make them one day. I do intend to go through them at a minimum. I made this sauce as close to the taste as I can remember but it's delicious no matter what.


When the boys were little I made them more traditionally using rice, and that is yummy, but my honey and I were working on eating keto/low carb at the time. So this recipe omits the rice but adds the flavor so you won't miss it and you’ll keep down the carbs. It is a very nicely balanced meal.


The keto sauce recipe is very kid-friendly. Don’t be afraid because it’s trying to be keto. It is sweet enough but doesn’t give a fake sugar flavor. Both sauces are delicious served over the stuffed pepper. You’ll want more. I usually double whichever sauce I make so leftovers aren't left naked.
