Tamale Chile



2 oz. dried guajillo chilies

2 oz dried ancho chilies

2 oz dried New Mexico chile, hot

1 oz dried chile de Arbol

2 T cumin

1 T salt

1/2 T garlic powder

4-5 cloves of garlic

1/4 onion


Rinse the dried chilies quickly.

Get rid of stems and seeds.

Put chilies, onion, and garlic in a pot and cover them with water.

Boil approximately 20 minutes.

Blend the chiles, garlic, and onion until smooth, adding chili water as needed.

Pour chili sauce over a strainer to strain out all seeds and thicker material.

Pour into pot and add salt and cumin then adjust to taste.
